arroz con leche (rice pudding) recipe.
tonight, i made arroz con leche (spanish for “rice with milk”) and i would like to share the recipe with you! it’s really simple and be modified depending on what you have. this rice pudding will be thinner than usual rice pudding.
- 4 cups of a combination of water and milk products*
- 1 cup rice**
- cinnamon to taste
- clove to taste
- nutmeg to taste
- handful of raisins (optional)
- lemon or orange peel
- vanilla extract
- 1/2 cup granulated sugar
- rum (optional)
*you can use different kinds of milk products to create a different taste. usually i use a mixture of sweetened condensed milk, 2% milk, and evaporated milk, but today i used whipping cream and evaporated milk in addition to water since my milk was expired (lol). if you use sweetened condensed milk, adjust the sugar levels to your taste
**i only have basmati rice at home so i use that, however you can use any kind of rice you want to use!
combine liquids, rice, spices, raisins, and citrus peel in a pot. bring to a boil, then reduce heat until simmering (usually on the low end). simmer until rice is cooked. some of the liquid will evaporate and make the pudding thicker. add the vanilla extract, rum, and sugar, then simmer for a bit longer to set the flavor in (not too long though). remove from heat. the pudding will thicken as it stands, but again, it will be thinner than american rice pudding.
